Kimchi Pork Duruchigi

10 oz. pork belly
1 cup kimchi
1 green onion
Half a white or yellow onion
1 King oyster mushroom
2 Tbsp. rice wine for cooking
2 Tbsp. canola oil
1 Tbsp. red or cayenne pepper
1/2 tsp. Ground pepper 1/2t

For sauce:
2 Tbsp. chili paste
1/2 Tbsp. minced garlic
1 tsp. fresh minced ginger
2 Tbsp. sugar *
1 tsp. soy sauce

* Add more sugar to make it less spicy

Cooking Steps:

  1. Slice the pork belly and kimchi into bite-size pieces.
  2. Cut the green onion into short lengths. Slice the onion and mushroom into thin pieces.
  3. Mix the ingredients for the sauce in a small bowl.
  4. Add canola oil to a heated frying pan, then add the pork belly, cooking rice wine, and ground pepper. Cook the pork belly at medium heat for 3-4 minutes.
  5. Add in the sliced onion and mushroom, sauce, kimchi, and red pepper powder. Add in the green onions last. Quickly stir-fry at high heat until fully cooked.
  6. Serve with rice or tofu, and lettuce.
  7. Eat and enjoy!
